Hawaiian Mango Bread

Serves 8

Ingredients:

    2 cups sifted flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 cup sugar
    1 teaspoon cinnamon
    3/4 cup raisins
    3/4 cup vegetable oil
    3 eggs
    2 ripe mangos (chopped)
    1 teaspoon vanilla

Directions:

Mix dry ingredients together. Mix together raisins, vegetable oil and beaten eggs. Add dry ingredients, mixing well. Add in mangos and vanilla. Pour into greased pan. Bake at 325 degrees F. for one hour. Cool for 20 minutes.
