Chocolate Cups
From Ginger (USA)

Serves 35

Ingredients:

    1 cup pecans, finely ground
    3/4 cup confectioners' sugar
    1/3 cup unsweetened cocoa powder
    six Tablespoons soft butter
    three egg whites
    1/2 teaspoon vanilla

    Chocolate Frosting
    2 Tablespoons soft butter
    1 teaspoon vegetable oil
    2 oz. semisweet chocolate, melted
    red and green sprinkles

Directions:
Heat oven to 350 degrees F. Put 35 small baking cups on cookie sheet. Combine nuts, sugar and cocoa. Add butter and blend. Add egg whites and vanilla. Blend to a soft batter.
Spoon batter into baking cups. Bake 15 minutes. Cool on a wire rack.

Frosting. Stir butter and oil into melted chocolate. Spread on cupcakes. Sprinkle decorations on top.

Prep Time: 10 to 15 min.        Cooking Time: 15 min.
