Chocolate Zucchini Bread

Makes 2 large loaves

Ingredients:
3 eggs beaten
1 cup oil
2 tsp. vanilla
3 cups sifted flour
2 tsp. baking soda
½ tsp. salt
1 tsp. baking powder
½ tsp. cinnamon
3 tbsp. cocoa
2 cups shredded zucchini
1 cup coarsely chopped walnuts

Directions:
Preheat oven to 350° F.

In a large bowl, beat together eggs, oil, sugar and vanilla.

In a separate bowl, stir together sifted flour, baking soda, salt, baking powder, cinnamon and cocoa. Add to the egg mixture.

Gently stir in the shredded zucchini and walnuts until evenly mixed. Do not over mix.

Evenly distribute zucchini dough into two bread pans and bake at 350° F for 40-45 minutes. Remove from oven and let cool for 15-20 minutes.
