Crepes Chocolat

Ingredients:

    2 large eggs
    1/2 cup milk
    1/2 cup water
    3/4 cups flour
    7 teaspoons sugar
    1/3 Tablespoons butter
    2 Tablespoons cognac
    1 package chocolate pudding
    1 teaspoon instant coffee granules
    3 cups whipping cream
    4 squares bittersweet chocolate
    1/2 cup butter
    1 1/4 cup evaporated milk
    2 1/2 cup confectioners' sugar

Directions:
Mix eggs, milk, water, flour, sugar, one teaspoon butter, and cognac. For filling, beat pudding mix, instant coffee and cream together until thick. Melt chocolate, butter, evaporated milk, and confectioners' sugar together until thick.
Heat a crepe pan or small skillet to high. Place batter in pan and cover bottom of pan. When brown, flip it over and brown the other side. Discard the first crepe, and continue to make the remainder of the crepes. Stack crepes on a plate and let cool. Then spoon the filling into the center and roll up the crepe. Add sauce to top.
