Coconut Cake
Serves 10 Ingredients:
1/2 tsp. baking soda ½ cup shortening 1 3/4 cup sugar 1 tsp. vanilla 4 egg whites 1 1/2 C. milk Coconut Frosting 1/2 cup shortening 1 tsp. vanilla 2 cups powdered sugar 1-2 Tbsp. milk 2/3 cup flaked coconut

Grease and lightly flour a rectangular baking pan. Stir together flour and baking soda. Beat shortening with an electric mixer on high for 1 minute. Add sugar and vanilla. Mix until well blended. Add egg whites and mix well. Prep Time:15 minutes Cooking Time: 30-35 minutes
