Passover Sponge Cake

Serves 10

Ingredients:

    9 eggs, separated
    1 1/3 cups confectioners sugar
    Juice from one lemon
    1/2 cup potato flour
    1/2 cup matzo cake meal

Directions:
Beat whites until stiff. Add confectioners sugar. Beat together yolks and juice. Fold into egg whites. Add flours. Pour batter into ungreased loaf pan. Bake at 375 degrees Fahrenheit (190 degrees C) for one hour.
