Pavlova

Serves 8

Ingredients:
4 egg whites
1 cup caster sugar (fine white sugar)
½ tsp. vanilla
1 tsp. white vinegar
2 tsp. cornflour (cornstarch)
1 pint of whipping cream
Seasonal fresh fruit

Directions:
Whisk the egg whites in a bowl with the sugar, vanilla and vinegar until stiff, then fold in the cornstarch. Place onto a lightly greased baking sheet and bake at 250° F for 1½ hours without opening the oven.

Leave in the oven to cool.

Cover the Pavlova with whipped cream and decorate with seasonal fresh fruit like strawberries or kiwi. Refrigerate until served.
