Artichoke Pasta

Serves 2-4 people

Ingredients:
- 10 oz artichokes, halved
- 1 can chopped tomatoes, partially drained
- 5 crushed garlic cloves
- 4 teaspoons olive oil
- 8 oz fresh or canned mushrooms
- 1 package spiral noodles, cooked
- Mozzarella cheese (if desired)

Directions:
Sautee garlic and mushrooms in oil until light golden brown. Add
remaining ingredients and cook for about 10 minutes. Serve over spiral
pasta, sprinkled with shredded mozzarella, if desired.
