Artichoke Pasta

Serves 2-4 people

Ingredients:
  • 10 oz artichokes, halved
  • 1 can chopped tomatoes, partially drained
  • 5 crushed garlic cloves
  • 4 teaspoons olive oil
  • 8 oz fresh or canned mushrooms
  • 1 package spiral noodles, cooked
  • Mozzarella cheese (if desired)

Directions:
    Sautee garlic and mushrooms in oil until light golden brown. Add remaining ingredients and cook for about 10 minutes. Serve over spiral pasta, sprinkled with shredded mozzarella, if desired.
