Slow Cooked Barbecued Beef

Serves 6

Ingredients:

    2 pounds chuck roast, cubed
    2 cups sliced onions, separated into rings
    1 cup commercial barbecue sauce
    1 Tablespoon cornstarch
    1 Tablespoon water
    6 toasted rolls or buns

Directions:
Cook beef, onion and sauce in slow cooker for 8 hours on low setting in slow cooker. You can also cook it in an electric skillet, with lid on, checking often to add more sauce if necessary. Remove beef and onions, leaving sauce in cooker. Shred beef with forks. Combine cornstarch and water, and slowly add to barbecue sauce, stirring constantly to avoid lumps. Cook on high, continuing to stir. When it thickens, return beef to sauce and cook 10 minutes. Serve on rolls.
