Awesome Grilled Baby Back Ribs

Ingredients:
1 whole or ½ rack per person
Dry spices (e.g., pepper, basil, cilantro, etc.)
Barbecue sauce
Optional: minced onion, chopped garlic, chives

Directions:
Season ribs with your favorite dry spices (pepper, basil, cilantro, etc.).

Lay in a single layer in a long casserole dish (9x12x2) or deep cake pan (more than a single layer causes toughness). Sprinkle bits of minced onion, chopped garlic, chives, etc., if desired.
Pour about a ½ cup of water in the dish under the racks.

Cover tightly with foil. Bake at 300°F-350°F until the meat shrinks up about ¼ inch to ½ inch off the bone (about 3-4 hours).

You can now store in the refrigerator for a day or grill immediately. If grilling immediately, brush each rack generously with your favorite barbecue sauce. Continue to add sauce as the ribs are grilling.

Grill about 20-45 minutes. You decide how crispy or well done they should be. The oven time actually cooks the meat, the grilling adds the final touches.
