Coq Au Vin

Serves 4

Ingredients:

    1 Tablespoon vegetable oil
    1 whole fryer chicken, cut
    1 Tablespoon salt
    1/3 teaspoon black pepper
    1/4 teaspoon garlic powder
    2 cups red wine
    1 cup chicken stock
    1 chopped onion
    1 Tablespoon cornstarch
    1/3 cup water

Directions:
Heat oil. Season chicken with salt, pepper and garlic powder and saute about 6 minutes. Put wine in bowl and dip chicken pieces in wine. Return to skillet, and add remaining wine, chicken stock and onions. Cover and cook on medium heat for 30 minutes until chicken is done. Mix together cornstarch and water and add to sauce to thicken. Cook an addtional 3 or 4 minutes.
