Corned Beef, Cabbage & Potatoes

Serves 6 to 8

Ingredients:

    1 corned beef brisket
    20 black peppercorns
    5 garlic cloves
    2 bay leaves
    1 Tablespoon allspice
    4 pounds potatoes, peeled and quartered
    1 pound peeled carrots
    1 pound peeled parsnips (optional)
    1 head green cabbage, chopped
    Chopped parsley

Directions:
Put beef and spices in saucepan and cover with water. Boil and reduce heat. Cover and simmer 2 to 2 1/2 hours. Add potatoes, carrots and parsnips, and simmer 30 minutes. Add cabbage during last 10 minutes. When serving, garnish with parsley.
