
Fiesta Meat Chili

Serves 8
Ingredients:
1 medium onion, chopped (about 1 cup)
1 medium green bell pepper, chopped (about 1 cup)
4 garlic cloves, finely chopped
1 lb. ground pork or diet lean ground beef
2 cups salsa
2 tbsp. chili powder
1 can (15 or 16 oz. each) pinto beans, rinsed and drained
1 can (15 or 16 oz. each) kidney beans, rinsed and drained
2 medium tomatoes, diced (about 2 cups)
1 pkg. (16 oz.) frozen corn
Sour cream (optional)
Shredded cheddar cheese (optional)

Directions:
Cook onion, bell peppers, garlic, and ground pork or beef in Dutch oven
over medium heat, stirring frequently, until the meat is no longer pink;
drain if necessary.
Stir in remaining ingredients (except sour cream and cheese), breaking up tomatoes. Heat to boiling; reduce heat. Cover and simmer about 30 minutes.
Top each serving with cheese and sour cream (optional).
Serve with warm corn bread and butter.
