Hickory Chicken Fried Rice

Serves 4-5

Ingredients:
1 lb. skinless, boneless chicken breast
1 green, red or yellow bell pepper, chopped
1 medium onion or 5-6 green onions, chopped
2 eggs, beaten until smooth
½ cup hickory barbecue sauce
2 packets fried rice seasoning
2 cups cooked rice
Salt and pepper to taste
Soy sauce to taste

Directions:

  • Chop chicken and marinate in barbecue sauce for at least 1 hour.
  • Stir-fry chicken until cooked.
  • Add peppers and onions. Stir-fry until cooked, but still crispy.
  • Add eggs. Stir-fry until completely cooked.
  • Add cooked rice, then fried rice seasonings. Stir until well mixed.
  • Serve, add salt, pepper and soy sauce to taste.
