Salsa Lasagna

Serves 6

Ingredients:
One package Harvest Burgers Recipes ground beef substitute (or 1.5-lbs. extra lean ground turkey)*
Two sweet red peppers
Two large (or four small) tomatoes
One yellow onion
24 oz. fat-free cheddar or Monterey Jack cheese
6-8 flour tortillas
Two 4-oz. cans chopped green chiles
One can whole-kernel sweet corn
Two 10-oz. jars chunky salsa
Two packages taco seasoning (enough to season 2 lbs. of meat)
Fat-free chicken broth
1 tbsp. sugar
Nonstick cooking spray

* Harvest Burgers are fat-free. Turkey will add at least a few grams of fat.

Directions:
In a large skillet, prepare meat with taco seasoning, adding the amount of water called for in the directions on the seasoning packages.  Make sure meat has absorbed almost all the liquid.

Chop peppers, tomatoes and onion and place in saucepan.  Drain chiles and corn and place in same saucepan.  Add sugar and a small amount of fat-free chicken broth and cook, stirring frequently, until onions and peppers are tender.  Drain.

Spray two-quart rectangular baking dish with nonstick cooking spray. On the bottom, arrange up to half the flour tortillas, cutting as necessary to fit. Spread half the seasoned meat, then half the vegetable mixture, then one jar of the salsa, then 12 ounces of cheese. Repeat layers.

Cook, covered, at 400° F for 20 minutes.  Then uncover and cook another 10 minutes or until hot and bubbly. Let stand 5 minutes.  Use sharp knife to cut portions, then remove from baking dish with spatula. Garnish with cilantro or parsley. Roll up any leftover tortillas and serve on the side.

Approximately 300 calories and 7 grams of fat per serving.
