Spicy Smothered Pork Chops

One serving per pork chop.

Ingredients:
2-4 boneless pork chops
1 large white or yellow onion
1 sweet green pepper
1 sweet red or yellow pepper
2-3 hot peppers (jalapeno or serrano -- handle with care!)
1 large potato (or 2-3 small ones)
1 small bottle barbecue sauce
8 oz. fat-free chicken broth
1 tbs. canola oil

Directions:

Sprinkle and pat down cajun seasoning powder on both sides of pork chops and set aside. Cut and separate onion into long strips and set aside. Seed all peppers and set aside. (Wash hands thoroughly immediately after touching hot peppers!) Cut potato(es) into small chunks and set aside.

Puree peppers, potato(es), chicken broth, barbecue sauce and additional cajun seasoning powder in food processor.

Sear seasoned pork chops in canola oil, in deep skillet, then remove from skillet. Place onion strips in same skillet, sprinkle with cajun seasoning powder and saute in pan drippings just until they begin to become translucent. Then pour pepper and potato puree into skillet with the onions and stir. Cook, stirring frequently, until mixture thickens. Lower heat and add seared pork chops. Smother pork chops with sauce and simmer until pink in the center (outside of pork chops will be firm but will bounce back when touched).
