Easy Stuffed Green Peppers

Serves 4-6

Ingredients:
6 green peppers
1 ½ lb. ground beef
1 ½ cups of instant rice
16 oz tomato sauce
¼ tsp. salt
¼ tsp. pepper
2 tbsp. Worchester Sauce
1 egg

Directions:
Preheat oven to 350° F.

Halve the peppers so you have three tops and three bottoms.  Hollow out the peppers.  Make sure you remove all of the seeds.

Boil peppers in a large pot for 3-4 minutes.  Drain the peppers and let cool for 5 minutes.

In a mixing bowl, combine the ground beef, rice, salt, pepper, Worchester sauce, egg and 2 tbsp. of the tomato sauce.  Knead the mixture by hand.  Mix thoroughly.

Place peppers into a 9x12 pan, hollow side up.

Divide mixture evenly into six parts.  Make meatballs out of the mixture and place them into the halved peppers. Pour remaining tomato sauce over peppers.

Cover with aluminum foil and bake for 75 minutes.
 
*  For kids who don't eat green peppers, cut the recipe to two green peppers and place meatballs in the pan next to the peppers.
