Serves 10-12
Ingredients:
2/3 cup packed brown
sugar
1/4 cup low-fat peanut butter
4 Tablespoons light margarine
1 teaspoon vanilla
1 large egg
1 large egg white
1 1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup low-fat milk
Frosting:
1 1/2 Tablespoon low-fat margarine
1/4 cup sugar
2 Tablespoons low-fat peanut butter
1/4 cup low-fat milk
1 3/4 cups powdered sugar
1 teaspoon vanilla extract

Directions:
Beat first 4 ingredients in mixer about 5 minutes. Add egg and egg white, beating
well. Combine flour, baking powder and salt, and add to sugar mixture alternately
with 1/4 cup milk, mixing after each addition. Spoon batter into 9 inch baking
pan coated with cooking spray. Bake at 350 degrees Fahrenheit for 25 minutes.
Cool in pan.
For frosting, melt 1 Tablespoon margarine. Add sugar and peanut butter and cook
two minutes, stirring constantly. Remove from heat and cool. Add powdered sugar
and vanilla and blend. Spread frosting over cake.
