Serves 2-3

Ingredients:

  • 1/2 lb smoked sausage, sliced
  • 1 small onion
  • 1 sm green bell pepper
  • 1 sm red bell pepper
  • 1 zucchini
  • 1 tomato
  • 4 oz sliced fresh mushrooms or 1 sm can sliced mushrooms
  • 1 tb Oyster Sauce
  • 2 tb Soy Sauce
  • 2 tsp Stir-Fry oil
  • 1/4 cup chicken broth or water

Directions:

Thin slice the onion, bell peppers, and zucchini. Add stir-fry oil to wok or fry pan and heat. Add sliced sausages and onion and brown. Add sliced vegetables except tomato. Stir well to make sure everything is coated with the oil. Add sliced tomato. Add oyster sauce, soy sauce, and 1/4 cup broth or water. Mix well. Turn fire to low, cover pan, and simmer about 10 minutes. Thicken any liquid left in the pan with 1 tsp cornstarch dissolved in 1/4 cup broth or water. Serve over steamed rice.

Serving Suggestions:

The veggies do not have to be the ones mentioned in the ingredients. You can use any kind. Just make sure they are thin sliced so they will cook quickly. I think carrots would make the dish more colorful.
