Serves 4-5
- Ingredients:
- 1 lb. skinless, boneless
chicken breast
- 1 green, red or yellow
bell pepper, chopped
- 1 medium onion or 5-6
green onions, chopped
- 2 eggs, beaten until smooth
- 1/2 cup hickory barbecue
sauce
- 2 packets fried rice seasoning
- 2 cups cooked rice
- Salt and pepper to taste
- Soy sauce to taste

Directions:
- Chop chicken and marinate
in barbecue sauce for at least 1 hour.
- Stir-fry chicken until
cooked.
- Add peppers and onions.
Stir-fry until cooked, but still crispy.
- Add eggs. Stir-fry until
completely cooked.
- Add cooked rice, then
fried rice seasonings. Stir until well mixed.
- Serve, add salt, pepper
and soy sauce to taste.
