Serves 2-4
Ingredients:
- 2 medium potatoes, cooked
and diced
- 2 tart apples, peeled
and diced
- 2 raw carrots, peeled
and diced
- 2 medium dill pickles,
diced
- 2 cups cooked beets, peeled
and diced (save juice)
- l medium onion, peeled
and minced
- dash white pepper (or
black)
- 3/4 cup diced herring
(pickled or salted) (fish is optional)
Sour Cream Dressing
- l cup sour cream
- l tbsp. lemon juice
- 2 tsp. beet juice
- l/4 tsp. salt
- dash of sugar

Directions:
Combine all ingredients
in salad bowl and mix with salad dressing or sour cream dressing. Herring could
be mixed with salad or served on the side. Sardines or anchovy fillets can be
substituted for herring. For dressing, combine and blend ingredients thoroughly.
Makes l cup dressing.
