Serves 8
Ingredients:
8 medium potatoes
4 scallions (more if you like a strong onion flavor)
Pepper and salt to taste
1/2 cup milk
Butter

Directions: Peel
the potatoes and boil until soft but not mushy. Drain the potatoes and either
pass them through a food mill or mash them.
Chop the scallions into
small pieces and add them to the milk. Boil for five minutes. Then add the
milk, onions, salt and pepper to the potatoes and whip. Serve with a knob of butter
on top.
