Serves 6

Ingredients:

  • Turkey neck, giblets and liver, cut in cubes
  • 5 cups turkey stock
  • 1 cup water
  • 1/4 cup flour
  • 1 celery rib, sliced
  • 1 carrot, peeled and sliced
  • 1 onion, quartered
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon ground black pepper
  • 1 bay leaf
  • 1 teaspoon salt

Directions:
In a medium saucepan, bring the turkey stock to a boil. Add giblets, celery, carrot, onion, bay leaf, pepper and salt. Cook at a simmer for one hour. Gradually dissolve flour in water. Slowly add the flour mixture, while stirring, to the turkey stock. Boil until it is thick.

Prep Time: 15 minutes        Cooking Time: 1 hr, 15 min.
