Serves 6

Ingredients:

  • 4 lb. pumpkin or butternut squash, peeled
  • 2 onions, peeled
  • 2 apples, cored
  • 2 cups chicken stock
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 2 cups water
  • 2 1/2cups milk
  • Freshly ground pepper to taste
  • 1/2 cup light sour cream
  • Chopped chives

Directions:

Roughly chop pumpkin, onion and apples. Place in heavy-based saucepan. Add stock, nutmeg salt and pepper. Bring to a boil. Cover and simmer 35-40 minutes until pumpkin is tender. Puree mixture in a food processor or rub through a sieve. Return to pan and stir in milk.  Adjust seasonings, serve garnished with sour cream and chopped chives.
