Serves 4-6

Ingredients:

  • 2 cups fresh mushrooms (about 1/2 lb.)
  • 1/4 cup chopped onion
  • 3 tbsp. butter
  • 1/4 cup flour
  • 1/2 cup cold water
  • 4 cups beef broth
  • 1/2 cup light cream
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/8 tsp. nutmeg

Directions:

Slice mushrooms through cap and stem. Saute in a large pot with onions and butter over medium heat. Dissolve flour in cold water and blend with mushroom mixture, stirring quickly. Slowly stir in broth. Cook until slightly thickened over medium heat. Cool slightly. Add cream, salt and pepper and simmer for an additional 10 minutes. Stir occasionally and serve.
