Soak sun-dried tomatoes
in warm water for 15 minutes. Squeeze dry. Put tomatoes into a food processor
or blender. Slowly add olive oil, pine nuts, Thyme, salt and pepper. Blend
thoroughly. Remove ingredients from blender or food processor and put into a mixing
bowl. Stir in minced garlic. Add Parmesan cheese to taste.

Ð mix in 1/2 cup of the water used to boil the pasta.
