Serves 2-4

Ingredients:

  • 1/2 cup sun-dried tomatoes
  • 1/2 cup water
  • 1/3 cup olive oil
  • 1/3 cup pine nuts (Pignoli)
  • 1/4 tsp. dry Thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. minced garlic
  • Parmesan cheese to taste

Directions:

Soak sun-dried tomatoes in warm water for 15 minutes.  Squeeze dry. Put tomatoes into a food processor or blender. Slowly add olive oil, pine nuts, Thyme, salt and pepper.  Blend thoroughly. Remove ingredients from blender or food processor and put into a mixing bowl.  Stir in minced garlic. Add Parmesan cheese to taste.

*  As a pasta sauce Ð mix in 1/2 cup of the water used to boil the pasta.
